These baked lemon donuts are light, fluffy and such a treat. They are full of fresh lemon flavor and so easy to whip up for a special breakfast or brunch. Baked Lemon Donuts
1 cup flour
1/2 cup whole wheat flour
1/2 cup sugar
3/4 t baking powder
1/4 t salt
2 T lemon zest
2 eggs
1/2 cup almond milk
1/3 cup sour cream
2 t vanilla
3 t lemon juice
3 T coconut oil
Lemon Glaze
1 cup powdered sugar
4 T lemon juice
Preheat oven to 375 degrees. Combine all dry ingredients, along with lemon zest in a mixing bowl. Then beat eggs in a medium size bowl. Add remaining ingredients and whisk until well mixed. Slowly add dry ingredients to wet until smooth. Spoon batter into greased donut pan. Fill each two thirds full. Bake for 8-9 minutes. Let cool then dip donuts in glaze.
