Baked Oatmeal Recipe
Are you looking for an easy breakfast idea? With the kids gearing up for school, we’re on the hunt for more ready-to-go breakfast ideas, and this Baked Oatmeal Recipe is a great solution for those busy mornings. We like to bake it the night before, so it’s ready to slice and serve the next morning.
This baked oatmeal recipe is made with fresh strawberries, raspberries and blueberries, but the great thing is, you can add whatever fruit and nuts you’d like! We tried two versions of this recipe – one traditional one and a vegan one where we replace the eggs with mashed bananas and used almond milk.

Ingredients
3 Eggs
2 Tbsp oil
½ Cup brown sugar
1 Cup milk
2 Tsp vanilla extract
1 Tsp cinnamon
1 Tsp baking powder
¼ Tsp nutmeg
3 Cups oats
1 ½ Cups raspberries, blueberries and strawberries
Sliced almonds
Directions
Preheat the oven to 350 degrees. Grease a baking pan. Set aside.
In a bowl combine eggs, oil, sugar, milk, vanilla extract, cinnamon, baking powder and nutmeg.
Add the oats and stir to incorporate. Add half of the berries nd with the help of a spatula carefully incorporate them.
Top the oats with the remaining berries and sliced almonds.
Take to the oven and bake for 45 minutes.
Remove from oven and let cool before slicing and serving.
Vegan Berry Baked Oatmeal Recipe
Ingredients
2 mashed bananas
2 Tbsp oil
½ Cup brown sugar
1 Cup almond milk
2 Tsp vanilla extract
1 Tsp cinnamon
1 Tsp baking powder
¼ Tsp nutmeg
3 Cups oats
1 ½ Cups raspberries, blueberries and strawberries
Sliced almonds
Directions same as above.
