Butternut Squash and Ground Turkey Chili

Ingredients

1 Tbsp olive oil

1 Onion, chopped

2 Garlic cloves, minced

2 Cups butternut squash, cubed

2 Tsp chili powder

1 Tsp cumin

2 Tsp paprika

3 Cups stock

1 Can tomato paste

1 Pound ground turkey breast

Butternut Squash and Ground Turkey Chili

Directions

Heat olive oil in a large pot over medium heat. Add ground turkey and cook until browned. Add onion and cook until transparent. Mix in garlic and cook for 1 more minute or until fragrant.

Add chili powder, cumin, paprika, and butternut squash cook for 3 minutes. 

Add tomato paste and stock and bring to a gentle simmer. Cover and let it cook for around 15 minutes or until squash is tender.

I do not recommend freezing this chili (and hey it’s so quick to make there’s no need to do it!) because the butternut squash when frozen and reheated get’s super soggy and mushy.
