Easy Peach Tart Recipe
We mark the summer coming to an end each year with a drive over the gorgeous Kebler Pass from Crested Butte to Paonia, Colorado to pick peaches. These peaches are some of the tastiest in the world. This year, I made an easy peach tart. And when I say easy, I mean it. The kids devoured it, as did Alex and I. And to top it off, it’s pretty as can be.

Easy Peach Tart Recipe
1 package frozen puff pastry
4-5 peaches, peeled and sliced
egg
4 T honey
1 lemon
Peel and slice peaches. You can also leave the skin on the peaches. Place in a bowl with 3 T honey and juice from half a lemon.
Thaw the puff pastry as per directions on the box. Once thawed, roll out on lightly floured surfaced. I like to roll mine out just a little bit. Trim edges of each rectangle.
Brush egg wash (egg yolk plus 1 teaspoon water) on each puff pastry rectangle.
Start placing peach slices in an overlapping row down the center of each puff pastry.
Brush peaches with remaining honey from bowl of peaches.
Bake in 400 degree oven for 12-14 minutes, until edges start to brown.
Serve warm.
