I’ve got to admit that after a day of skiing all I want is hot chocolate. We’ve made it a tradition with Calla, our five year old, that we get to treat ourselves after a big day on the hill. And there’s nothing like a deluxe hot chocolate to warm you up. I’ve been experimenting with non-dairy hot chocolate recipes and I’m sharing my favorite with you. This one’s a Mexican Hot Chocolate with a tiny bit of a kick. It’s so easy to make and is healthier without all the added sugar. This recipe uses honey or agave to sweeten it up. But the best part is the pinch of cayenne that gives it a little kick.

Non-Dairy Mexican Hot Chocolate Recipe

2 cups unsweetened almond milk

2 T cacao powder or cocoa powder

1 pinch of cayenne

1/4 t cinnamon

1/2 t vanilla

2 T honey or agave

Pour almond milk in pan over medium low heat. Begin to warm up the milk. Add the rest of the ingredients and whisk until smooth. Serve hot.
