You know we love a good and healthy muffin. Our girls are still obsessed with our Mini Healthy Breakfast Muffins. And it is getting to the season for pumpkin muffins!  If you are looking for ways to add extra protein into meals and snack, we have the perfect recipe for you. This Protein Apple Muffins recipe is packed with protein powder, greek yogurt and eggs to give you a great protein boost.
 
First we are using oat flour instead of oats. That’s what makes the muffins softer. Making oat flour is super easy, just place oats in your food processor and pulse for around 3 minutes or until finely ground. 
 
The next tip for sky high protein muffins is whipping up the egg whites before adding the rest of the ingredients. That incorporates extra air to the batter which results in fluffier muffins. And then it’s apple time. You can process some of the apple to make sure there are apple bits throughout the whole muffin.
 
Finally the protein: This is a protein powerhouse! It’s packed with egg whites, Greek yogurt and protein powder. So that makes this totally satisfying and super healthy. If you don’t have protein powder on hand or don’t like using it just substitute for 4 more tbsp oat flour. The result is going to be very similar in taste and shape.

Protein Apple Muffins

Ingredients

2 Cups oat flour

2 apples, diced

2 Scoops protein powder

2 Egg whites

2 Eggs

1 Cup Greek yogurt

1 Tsp baking powder

2 Tbsp honey or maple syrup

1 Tsp cinnamon 

Directions

Preheat an oven to 350 degrees. Prepare a muffin pan with muffin liners and set aside. 

In a food processor, combine 1 apple with cinnamon and honey. Pulse until it has a pure like consistency. Set aside.

In a bowl whip up the egg whites until light and fluffy. Add the eggs, Greek yogurt, protein powder and baking powder. 

Incorporate the processed apple. Mix in the remaining flour. Add the diced apple and mix until everything is incorporated.

Divide the batter between the muffin cups and top with a sprinkle of brown sugar. 

Take to the oven and bake for 18 minutes or until done.
