Guacamole with Roasted Corn and Chiles Recipe
This has been my go-to guacamole recipe for years and years. There is just something special about adding roasted corn and chiles to a basic guacamole. The cumin mixed with corn, chiles and red onion along with the avocado, lime and tomato make this a truly unique guacamole. It has been a crowd favorite for as long as I have been making it!
This is a perfect recipe for summer gatherings. Serve the guacamole with chips and veggies. It will also take your Taco Tuesday to the next level. Ha! See our video showing just how easy this recipe is to make.
Guacamole with Roasted Corn and Chiles Recipe
Ingredients
4 avocados
1 can of corn
1 can diced green chiles
2 tomatoes
1/2 diced red onion
2 tsp cumin
1 tsp chili powder
2 tsp salt
1 tsp pepper
2 limes
chopped cilantro
Combine the (drained) corn, chiles, cumin, 1 tsp salt, chili powder and 1 tsp oil into a bowl and mix together.
Spread on a sheet pan and broil for 8-10 minutes, watching closely. Remove from oven and allow to cool completely (I put in a bowl and stick in the refrigerator).
Combine mashed avocado, diced tomato, corn mixture, lime, cilantro, salt and pepper in a bowl.
Garnish with cilantro and radish slices.
Tip: To keep from browning, add an avocado pit into the guacamole. Serve with chips and vegetables.
