The girls and I made our favorite Sweet Potato Corn Chowder Recipe for our friends at Horizon. It’s creamy, sweet from the corn and sweet potatoes and filling. And the girls’ favorite part? Well of course it’s topping their bowls of soup with little pieces of bacon and shredded cheese!

This is such an easy soup to make and the kids can get in on the prep with this corn chowder.

Sweet Powder Corn Chowder Recipe

½ lb of thick sliced bacon, cut up in little pieces

1 onion, chopped finely

1 large russet potato, cut in small chunks

1 large sweet potato, peeled and cut in small chunks

4 cups of chicken broth

1 Tablespoon flour

½ cup Horizon whole milk

½ cup Horizon heavy whipping cream

12 oz package of frozen corn

½ cup Horizon Mexican style shredded cheese

Cook bacon in large pot, remove bacon and put on paper toweled covered plate to cool and leave 2 Tablespoons of bacon grease in pan. Sauté onion in pan until translucent. Add russet and sweet potatoes, along with broth to pan. Bring to a boil, reduce the heat, cover and cook for 10-15 minutes, until potatoes are tender.

Whisk together whole milk with flour in a small bowl, then add to pot and stir until combined. Add frozen corn, cream and ½ cup of cheese and combine and cook for 5 minutes.

Serve with bacon and shredded cheese.

Sweet Powder Corn Chowder

This soup makes a meal for your family. If your kids like a little spice, add diced mild green chiles to the soup. And if you really like it with a kick, try the hot fire roasted green chiles.
