Favorite Egg Bites recipe

simple to make and taste so good!

INGREDIENTS:

6 eggs ½ cup milk ¼ t salt  ½ t pepper ½ cup cheddar ½ cup chopped red pepper ½ cup chopped asparagus 2 handfuls spinach makes 12 frittata muffins

Sauté chopped red pepper, asparagus and spinach with one tablespoon of oil for 5 minutes. Do not overcook. You still want the pepper and asparagus to be crunchy.

Whisk together eggs and milk in mixing bowl. Add salt and pepper and stir. Then add cheese and veggies, stir. Use a measuring cup to fill muffin pan with 1/2 cup of egg mixture.

Bake for 20 minutes, or until set. Remove from oven and cool on rack for 5-7 minutes. Best when served warm.
