Weekly Family Meal Plan recipes: Week 1

If you are anything like us, coming up with new, healthy recipes to make for those busy weeknights is something we are looking for help with! Well, I am here to help. I have a new side gig as a meal prep personal chef for two families. I love to cook and create, so this has been a fun side job for sure.

I am excited to start sharing some of my weekly meal prep recipes. Typically I make 3 entrees, one lunch, a breakfast and kid healthy snack. Each week I will share what I have made. Some recipes are my own creations and some are from my pinterest boards of favorite cooking blogs, alice & lois recipes and cookbooks.

WEEK 1 FAMILY MEAL PLAN RECIPES

Dinners

Chicken Fried Rice – I use this recipe as inspiration. It is simple to make using white or brown rice, frozen veggies (I like to use a bag of frozen peas and carrots and also edamame), dice up red pepper and some broccoli and a simple sauce made of soy sauce and oyster sauce. Kids and adults love this dish! Use as much chicken as you like to add more protein!

Pesto Chicken Pasta Bake – I used this recipe as a foundation for this delightful pasta bake. You can use rigatoni or ziti for this weeknight recipe. I also recommend doubling the chicken in this dish to up the protein.

Ground Turkey Enchiladas – This is the recipe I use for inspiration. It is easy to make, using canned red enchilada sauce. I use ground turkey for a lean protein. Add refried pinto or black beans, greek yogurt, mild green chilies and tortillas. My family absolutely loves this dish. Perfect to freeze as well.

Lunch

Buffalo Chicken Chopped Salad – this recipe is easy and healthy. I add hard boiled eggs to up the protein.

Breakfast and Snacks

Protein Waffles – this is by far my favorite protein waffle recipe! It uses cottage cheese, not protein powder.

Greek Yogurt Veggie Chocolate Muffins – these hidden veggie muffins are so yummy! Greek yogurt adds some protein as well as moisture, along with zucchini, carrots and spinach for added nutrients. Drop in some mini chocolate chips for some extra chocolate for the little ones!
