Favorite Shortbread Cookie and Santa Free Printable
Only a few more days until Santa comes for a visit! We are delighted to share a favorite family recipe with you today in partnership with our friends at Horizon Organics. One of our Pop Pop’s favorite cookies was shortbread. To honor him, we made chocolate dipped shortbread cookies to leave out for Santa this year. Shortbread Cookie Recipe
3 sticks (or 3/4 lbs) unsalted butter
1 cup sugar
3.5 cups flour
1/4 tsp salt
6 oz melting chocolate (our favorite is Ghirardelli dark chocolate melting wafers)
Preheat the oven to 350.
Mix the room temp butter and sugar until mixed (with electric hand mixer or stand mixer). Add vanilla. In a new bowl, sift together the flour and salt. Add the flour mixture to the butter and sugar mix. Mix on low speed until it forms a dough – do not over mix. Put the dough on a floured surface and shape into a ball and wrap with waxed paper. Chill for 30 -40 mins.
Roll the dough on a floured surface, about 1/2 inch thick. Use a circle, scalloped or rectangle cookie cutter. We used a 2-inch scalloped circle cookie cutter. Place on pan and sprinkle with sugar (if desired).
Bake for 20 minutes, or until the edges are a little browned. Cool and dip into melted chocolate. Place on parchment paper to cool.
