For the next month, we’re excited to share some of our favorite meals and go-to recipes. If your days are anything like mine, having something healthy and ready to go in the morning is key. That’s why I had to share our favorite little muffins that the girls devour. And the best part? They are packed with fruits and veggies. Perfecto. Do you have a mini muffin pan, it is a must in my kitchen. Perfect size for the kiddos.

These whole wheat mini muffins are packed with zucchini, carrots and apples. I love to keep them in the freezer to really make my mornings easier. And that’s the name of the game around our house.

Healthy Kids Mini Muffins


1 ½ cups whole wheat flour

1 teaspoon baking soda

½ teaspoon cinnamon

¼ teaspoon salt

3 T ground flax meal

3 T butter, melted and cooled

½ cup honey

1 egg

1 1/2 teaspoon vanilla

1 cup grated zucchini

½ cup grated carrot

¼ cup grated apple

¼ cup applesauce

Preheat oven to 350 degrees and butter mini muffin pan.

In a medium bowl, whisk together the dry ingredients. In a large mixing bowl, combine egg, butter, honey and vanilla. Slowly stir in dry mixture until blended. Gently fold in zucchini, carrot, apple and applesauce.

Bake in 350 degree oven for 15 minutes, or until a toothpick comes out clean. Cool on wire rack. Can freeze muffins as well.
