For the next month, we’re excited to share some of our favorite meals and go-to recipes. If your days are anything like mine, having something healthy and ready to go in the morning is key. That’s why I had to share our favorite Healthy Breakfast Mini Muffins that the girls devour. And the best part? They are packed with fruits and veggies. Perfecto. Do you have a mini muffin pan, it is a must in my kitchen. Perfect size for the kiddos.

These whole wheat Healthy Breakfast Mini Muffins are packed with zucchini, carrots and apples. I love to keep them in the freezer to really make my mornings easier. And that’s the name of the game around our house.

Our families love muffins. Any muffins. A new muffin that has been in rotation at our house is this Apple Protein Muffin. This recipe uses oat flour, greek yogurt, protein powder, apples and more. It is seriously so delicious. We also are big fans of the Lemon Poppyseed muffin. I think we get our love of lemons from our dad. So so good.

Healthy Breakfast Mini Muffins

Prep Time: 25 minutes
Cook Time: 15 minutes
Total Time: 40 minutes

Start your morning off with our favorite morning muffins. These whole wheat mini muffins are packed with zucchini, carrots and apples. I love to keep them in the freezer to really make my mornings easier.


  • 1 ½ cups whole wheat flour
  • 1 teaspoon baking soda
  • ½ teaspoon cinnamon
  • ¼ teaspoon salt
  • 3 T ground flax meal
  • 3 T butter, melted and cooled
  • ½ cup honey
  • 1 egg
  • 1 1/2 teaspoon vanilla
  • 1 cup grated zucchini
  • ½ cup grated carrot
  • ¼ cup grated apple
  • ¼ cup applesauce


    Preheat oven to 350 degrees and butter mini muffin pan.

    In a medium bowl, whisk together the dry ingredients. In a large mixing bowl, combine egg, butter, honey and vanilla. Slowly stir in dry mixture until blended. Gently fold in zucchini, carrot, apple and applesauce.

    Bake in 350 degree oven for 15 minutes, or until a toothpick comes out clean. Cool on wire rack. Can freeze muffins as well.
