A few things about blood oranges – I think they are so beautiful in color and they are such a unique citrus flavor. I picked up a bag at the market and couldn’t wait to try and add them into a few daily eats. I decided to wipe up a homemade salad dressing to use throughout the week. So tasty! Now, I dreamt of trying to replicate a blood orange dessert we had for our birthday but settled for making a vinaigrette instead.

Ingredients: 1/2 C extra virgin olive oil // 1/4 C apple cider vinegar // 1/3 C blood orange juice // 2 tsp dijon mustard // 1/2 fresh squeezed lemon juice // 1 diced shallot // salt & pepper // jar with lid

Add all of the ingredients into a mason jar. Screw on top and shake the ingredients together. My daughter loves helping with this part! Keep in the refrigerator for a week. This vinaigrette going well with a mixed greens or arugula salad.
