We are holding onto summer as long as we can. So we just had to share this simple recipe that is perfect for a brunch or lunch gathering – our Berry Bruschetta Recipe!  We used homemade challah bread for the toast. You can use a store bought challah or any other bread as well. But the challah is so good with this recipe. 
 
The spread is made with mascarpone cheese and greek yogurt so it’s incredibly light and airy. You could also use this spread as a crepe filling as well. Feel free to infuse it with other flavors too. Just add a dollop of jam to the mix and that’s it. 
 
We used strawberries and bananas to top the Berry Bruschetta but you can use whatever fruit you’d like. Try adding some blueberries, raspberries and blackberries too! Remember when we made a strawberry hand pie? So good! One thing we love about recipes like this is that you can use whatever fruit you have on hand. Blueberries, raspberries, kiwi, you name it!

Berry Bruschetta Recipe

Ingredients

1 Challah bread, sliced

1 Cup mascarpone cheese

1 Cup Greek yogurt

1/4 Cup honey

Juice and zest from 1 lemon

1/2 Tsp vanilla extract

1 Cup strawberries, sliced

2 Bananas, sliced in coins

3 Tbsp lemon juice

Honey and pollen as a topping

Directions

Slightly toast challah until light golden. 

In a small bowl combine berries and banana coins and drizzle with the 3 Tbsp of lemon juice. Set aside.

In a bowl of a mixer whip up mascarpone cheese and Greek yogurt. Add honey, lemon juice and lemon zest and vanilla and continue mixing until light and fluffy (around 3 minutes).

Spread a thick layer of the whipped mascarpone mix on top of each challah toast. Add berries and banana coins.

Drizzle with honey and top with pollen.
