Blueberry Lemonade Cocktail
We are spending a few weeks at our parents’ lake home in Michigan. We go blueberry picking every summer and bring home a big bounty! We enjoy trying to come up with different blueberry recipes. We have done blueberry coffee cake, mini blueberry galettes and blueberry sorbet. This time, we came up with a summery cocktail. We made blueberry simple syrup to compliment a lemonade vodka drink. Add some fresh mint leaves and you are set for a tasty cocktail perfect for a late summer afternoon.

Ingredients:
– blueberries
– lemonade
– fresh mint leaves
– honey
– water
– ice
Recipe
- Make the blueberry simple syrup. Mix 1 C water, 1/2 C honey, 1/2 C blueberries in a sauce pan. Whisk over low heat until honey is dissolved (about 5 minutes). Increase heat to medium and bring to gentle boil about 15 minutes. Make sure and stir often. Strain mixture in a fine mesh sieve and let cool.
- Pour over ice 5 ounces lemonade, 2 ounces blueberry simple syrup and 1 ounce (or to taste) vodka into cocktail shaker. Makes one drink.
- Pour into glasses and garnish with fresh blueberries and mint leaves.
