Quinoa with grilled vegetables
The grilling season has begun! When the weather permits, our family grills a majority of nights. We choose a protein, make a salad and grill some veggies.
This Quinoa with grilled vegetables recipe has been my go to side for grilling meals this year. Quinoa with grilled veggies, balsamic dressing and mozzarella cheese will be your new favorite!
You can grill whichever veggies you have on hand – I have done this recipe with portobello mushrooms and peppers, tasty! It is perfect when we have other families over for a BBQ. I love to start with this appetizer, which is another family favorite.

Ingredients:
quinoa (1 C = 4 servings)
2 red peppers
yellow pepper
zucchini
red onion
fresh mozzarella balls
balsamic vinegar
olive oil
garlic
salt and pepper
Quinoa with grilled vegetables Recipe
1. Cut the peppers, onion, and zucchini in quarter sections and grill.
2. Cook quinoa per directions on packaging.
3. Mix 1/4 C balsamic vinegar, 3 T olive oil, 2 chopped garlic cloves, salt and pepper for dressing
4. Cut grilled veggies and add to cooked quinoa. Cool in fridge. Before serving add chopped mozzarella balls and fresh herbs (you can use basil or parsley).
