Ingredients
5 cups fresh blueberries, rinsed, stems removed
1/4 cup sugar
1/4 cup honey
2 teaspoons lemon zest
2 T lemon juice
pinch of salt
1. Place blueberries, sugar, honey, lemon zest, lemon juice and salt in a large bowl. Stir to coat berries with sugar, then mash with a potato masher.
2. Transfer blueberry mixture to blender and blend on high for two minutes until smooth.
3. Use a fine mesh sieve over a large bowl and working in batches, press mixture through sieve using a rubber spatula.
4. Chill the mixture for an hour in the fridge, then follow the directions of your ice cream maker. We like to then freeze the sorbet in the freezer for 2 hours (or overnight) to harden it.
Enjoy this recipe… we know you’ll love it. We can’t wait to make this next month in Michigan after we pick blueberries with our folks!

Yum! I’ve always been a blueberry icecream kind of person yet since trying blueberry sorbet at a restaurant for dinner once have become addicted to this frozen treat! Because a lacking an icecream machine at home I’ve never prepared it myself. Your recipe left me tempted though and now I can’t wait to borrow one from a friend to try the sorbet out myself. Thanks for sharing! 🙂
