Lemon Bars recipe
You will love our grandmother’s best Lemon Bar Recipe. It is simple to make, and is sweet and tart. The perfect dessert.
Over Mother’s Day weekend, I celebrated our mom. I am so lucky to have her as an amazing example of what a mother is. She really defines what a mother is. We have the most incredible mentor showing us the ropes in motherhood.
Our mom had quite the mentor herself. Her mom, Lois was a selfless, hard-working mother (to six!), kind and true, with strong morals and values. I can say all of those things about my mom as well. Melissa and I are incredibly lucky to have two strong women to look up to.
Our grandmother, Lois spent so much time in her farmhouse kitchen in Minnesota. I have so many memories of her making meals for the entire family in the summer. One of our favorite desserts she made are lemon bars. –Sara

Lemon Bars
Crust:
1 cup flour // ½ butter // ½ cup powdered sugar
Cut flour, butter and powdered sugar together into fine crumbs. Put into 8×8 inch pan. Bake at 350 degrees for 15 minutes. I recommend lining the bottom of the pan in parchment paper. Spray the pan and paper with baking spray.
Filling
2 slightly beaten eggs // 2 tsp. flour // Rind of 1 lemon grated course // 2 tsp. lemon juice (fresh or bottled) // 1 cup sugar // ½ tsp. baking powder
Mix all of these ingredients together and pour over baked crust. Bake at 350 degrees for 25 minutes. Sprinkle with powdered sugar while hot. Cool. Cut into squares. You can double recipe and use a jelly roll pan.
