Southwestern Chicken Soup

Southwestern Chicken Soup Recipe

2 T vegetable oil

1 red bell pepper, seeded and chopped

1 medium yellow onion, finely chopped

3 cloves garlic, minced

1 ½ teaspoons cumin

1 teaspoon chili powder

1 jalapeno pepper, seeded and chopped (optional)

1 large sweet potato, peeled and chopped in 1 inch pieces

1 can diced tomatoes, with juice

3 1/2 cups chicken broth

Tyson® Refrigerated Fully Cooked Chicken Breast Strips

1 can (15 ounce) low sodium black beans, rinsed

1 can (15 ounce) corn

Garnishes:

chopped fresh cilantro

lime wedges

tortilla chips

avocado

radishes

Southwestern Chicken Soup

Instructions:

– Heat oil in large soup pan, add pepper, onion and garlic, along with cumin and chile powder and sauté for 3-4 minutes. Add chopped jalapeño if desired.

– Add sweet potatoes and sauté for one minute. Add chicken broth and bring to a boil.

– Cook the soup uncovered for 20 minutes until sweet potatoes are soft.

– Add black beans, corn and (chopped) Tyson® Refrigerated Fully Cooked Chicken Breast Strips and cook on low boil for 5 minutes.

– Serve soup with lime wedges, avocado, fresh cilantro and tortilla chips as garnishes.

We love hosting Fall get togethers and serving this soup is a favorite. You can set up a soup station on your kitchen island with all the garnishes – fresh cilantro, lime wedges, crushed tortilla chips and radishes. Another favorite to make a big pan of nachos to serve with the soup. Pile tortilla chips, Tyson® Refrigerated Fully Cooked Chicken Breast Strips, cheese, beans, chili peppers on a large jelly roll pan. Pop in the oven and then let guests add garnishes, sour cream and avocado when done. This is the perfect Fall party meal! Your guests will love it! Guests can mix all of the garnishes and toppings for the soup and the nachos. Now how fun is that?!

Hosting a party and serving this soup and nachos is so simple. I grab all of the ingredients at the Kroger right down the street. So simple. Just get ready for all of the Fall parties at my house with this soup and nachos!
